Crostone with Gorgonzola and Caramelized Onions:

Caramelized onions:
3 Red onions, peeled and sliced into rings
3 tbsp extra virgin olive oil
1 rosemary spring
4 tbsp balsamic vinegar
4 tbsp brown sugar

4 large slices of dense Italian bread, toasted
200g Gorgonzola, or QB

In a hot frying pan, add olive oil and rosemary and cook until rosemary slightly browns, add the onions and continue to cook for about 7-10 minutes or until onions are soft and slightly golden.

Add the balsamic vinegar and sugar and cook until the sugar has melted with the balsamic reduced. Add salt to taste and let caramelized onions cool down.

Spread the gorgonzola over the toasted bread and top with the caramelized onions. Cut into quarters and serve alongside un buon Chianti! A delicious holiday Aperitivo.
