Friday night pizza night has long been a family tradition in our household. That’s made better by using authentic Italian Cheeses like Mozzarella di Bufala – a creamy flavorful Mozzerella made with buffalo milk that can transport you straight to Naples.  🍕

This classic Pizza Margherita di Bufala recipe has no shredded cheese or fancy schmancy tomato sauce. It’s simple quality ingredients to make a restaurant quality pizza.

PIZZA MARGHERITA DI BUFALA

Ingredients

 – 1 1/2 warm water

– 2 1/2 teaspoons yeast 

– 2 tablespoons sugar

– 3 – 4 cups “00” flour (bread flour or AP flour work too)

– Pinch of salt 

– 1 can San Marzano tomatoes – pureed

– Fresh Basil

– 1 container of Italian Mozzarella di Bufala 

– 1/2 cup of semolina 

– Extra Virgin Olive Oil

Directions

Combine half of the warm water, yeast and sugar into a stand mixer. Allow to sit for 10 mins. Add 2 cups of flour, remaining water and a pinch of salt.  With the kneading paddle, slowly knead dough together. Continue to add flour slowly until dough is smooth and soft.  Cover in greased bowl and let sit for 1 hour. 

Preheat oven to highest setting (mine is 550 degrees Fahrenheit).  Place pizza stone or cast iron pan in oven.

Punch dough down and divide dough to desired size.  Dust countertop and dough with semolina.  Stretch dough into a circle. Dough should be thin.  Spoon a thin layer of tomato sauce followed by fresh basil. Top with slices of Mozzarella di Bufala. Using a pizza peel or equivalent, place pizza in oven.  Bake until golden.

Garnish with fresh basil and a drizzle of EVOO.
